Spring Clean Cucumber & Pineapple Juice

This is the kind of juice that makes me feel like I can finally shake winter off. Spring has a way of nudging us toward a refreshing reset. After the cosy, generally heavier foods of winter, lighter, fresher flavours feel like just what the body needs. This juice is bright, hydrating, and full of cleansing energy. With juicy pineapple for sweetness, apple for a crisp lift, and cucumber and mint for their cooling touch, it’s more of a refreshing tonic than a smoothie. Best of all, you don’t need a fancy juicer – a good high-speed blender does the trick beautifully. And if you use frozen pineapple, it chills the whole drink into a frosty, slushie-like treat. A glass of this is the perfect way to welcome the lighter and brighter season! Cheers to spring vibes!

 

Nutrition Bite:

Cucumber: Cucumber is made up of around 95% water, which makes it a natural hydrator and a gentle support for the body’s detox pathways. It’s also a source of vitamin K for bone health, small amounts of potassium to keep fluid balance in check, and antioxidants that help calm inflammation.

Ingredients:

2 cups pineapple chunks (ideally frozen)
1 small green apple, cored and roughly chopped
½ cup cucumber, peeled and chopped
1 Tbsp lime juice
8 -10 fresh mint leaves
1 – 1.5 cups of coconut water (depending on preferred thickness)
½ cup ice cubes

Method:

  1. Add all ingredients to a blender.
  2. Blitz until smooth,
  3. Pour into glasses and garnish with extra mint if you’re feeling a little fancy!
  4. Enjoy!
