Overnight Orange, Apple & Coconut Bircher Muesli

My favourite thing about Bircher Muesli has to be the fact that you wake up in the morning, and breakfast is pretty much good to go! And not just any breakfast either… It’s a healthy, flavoursome and wholesome breakfast that has all the key ingredients to set you up for a good day. My take on Bircher is dairy-free and has a lovely tart orange flavour that perfectly complements the sweetness of the apple and raisins. I use vanilla coconut yoghurt in place of dairy yogurt, and it is divine.

Serves 4

Ingredients:
2 cups of old-fashioned oats
1.5 cups of orange juice
4 tablespoons of raisins
1 tablespoon on maple syrup
8 tablespoons of vanilla coconut yoghurt
½ teaspoon of cinnamon
1.5 apples, grated
Handful of slivered almonds, optional
1 orange, peeled and sliced, optional

Directions:

  1. Place the oats, orange juice, raisins, maple syrup, coconut yoghurt and cinnamon into a bowl and mix together. Cover, and place in the fridge overnight.
  2. In the morning, add the freshly grated apple to the bowl. Divide the Bircher into 4 bowls, and top with slivered almonds and sliced orange, if desired.

Nutrition Bite: Raisins – Raisins content magnesium, which is an important mineral for muscle, nerve and heart health. Raisins are also rich in fiber, so are a good addition to routinely add to morning meals to help with bowel regularity!
