My favourite thing about Bircher Muesli has to be the fact that you wake up in the morning, and breakfast is pretty much good to go! And not just any breakfast either… It’s a healthy, flavoursome and wholesome breakfast that has all the key ingredients to set you up for a good day. My take on Bircher is dairy-free and has a lovely tart orange flavour that perfectly complements the sweetness of the apple and raisins. I use vanilla coconut yoghurt in place of dairy yogurt, and it is divine.
Serves 4
Ingredients:
2 cups of old-fashioned oats
1.5 cups of orange juice
4 tablespoons of raisins
1 tablespoon on maple syrup
8 tablespoons of vanilla coconut yoghurt
½ teaspoon of cinnamon
1.5 apples, grated
Handful of slivered almonds, optional
1 orange, peeled and sliced, optional
